I am so excited to share the easiest no oat granola recipe with you today, but first, I want to tell you how this came about.

Recently, I tried a granola that I absolutely loved, and it completely surprised me. It had no oats in it, wasn’t overly sweet, and just had that perfect crunchy texture I can’t stop thinking about. When I looked at the ingredients, I was even more surprised to see maple syrup in it, because I usually don’t love anything that tastes strongly like maple.

It also instantly reminded me of a granola I had years ago that I loved but could never quite figure out how to recreate. So, I decided to try making my own version at home, and I can honestly say this one is going into regular rotation. I love how simple the ingredients are and how packed it is with different nuts. Even the coconut flakes, which I normally don’t care for, just add texture here and don’t stand out in the flavor at all.

Easiest No Oat Granola Recipe

This No Oat Granola Recipe is an easy, crunchy, grain-free granola made with nuts, coconut, and maple syrup. A simple recipe you’ll make again and again.

Ingredients

  • 1 cup roughly chopped pecans 
  • 1 cup roughly chopped walnuts
  • 1 cup slivered almonds
  • 1 cup unsweetened coconut flakes
  • 1/2 cup almond flour
  • 1/3 cup pure maple syrup (adjust to taste)
  • 1 Tablespoon cinnamon

Instructions

  1. Preheat oven to 300°F and line a baking sheet with parchment paper.
  2. In a bowl, combine the pecans, walnuts, almonds, coconut flakes, almond flour, and cinnamon.
  3. Add maple syrup and mix really well until everything is coated.
  4. Spread the mixture onto the baking sheet and press it down firmly with a spatula.
  5. Bake for 20–25 minutes until golden brown. I rotated the pan about every 8 minutes. DO NOT stir it if you want clusters.
  6. Let it cool fully before breaking it apart. This is when it crisps up.
